Cheese 1: End of First Week, and Waxing

Time to get 'Cheese 1' ready for the next phase of its life.

Moving on from the squeezing and drying phase to maturing.


The Story So Far

It has spent 3 days in the fridge, wrapped in muslin, while being squashed between the two boxes with large pan of water for weight.

Then it spent 3 further days being wrapped in muslin, and kitchen towel,  being lightly squashed.

This has resulted in:

Once unwrapped, it looks like this:

It is pretty damn firm, slightly crumbly, and the offcuts taste of yogurty wensleydale. - Promising! but may yet turn into yogurty toxic mush.

For reference, it now weighs approximately 150g (that's all that's left of the two pints of milk!)

Unwrapped, it does at least look like cheese, The colouring from the red string is giving it some character, and probably some toxic bacteria too.

And here it is plastered with wax. In a future post I'll show how that was done .
